From the Iron Kettle

 



 

Anyone who has been to a Rendezvous knows Iron Kettle, a mountain man famous for his Dutch Oven cooking, a generous friend, and frequently the judge of cooking competitions. His well earned name comes from the cast iron kettle which he cooks in. 

 

He has graciously offered to contribute a recipe each month to our website. This, I'm sure will expand our waistlines along with our minds. Here's where you learn to live in style. the mountain man way!

 

Recipe of the Month


MOUNTAIN MAN BREAKFAST

1 lb. Bacon cut in 1/4 inch pieces or I like 1 lb of Hot

Jimmy Dean Sausage.

2 pkgs. of Southern style Hash Brown Potatoes or

Peel and cut into 1/4 inch cubes (about 6 large potatoes).

12 eggs slightly beaten and a tablespoon of water for each egg.

1 onion chopped (optional)

2 cups of shredded sharp Cheddar cheese.

 

In a #12 deep Dutch Oven brown* bacon or sausage, remove and set aside. Sauté onions remove and set aside.   Add potatoes cook until tender and golden brown. Stir in meat and onions. Heat up and add eggs.  When eggs are done (internal temperature of 160 degrees F.)  Sprinkle cheese on the top and return lid and let set for about 10 minutes Serve with Salsa, Tobacco or Louisiana Hot sauce. Good with biscuits and Honey.

 

* For Browning (18T-20B) Then reduce heat to 375 Degrees F (18T-9B)
